Ingredients

The ingredients are:
  • 4 (32 ounces) trout fish (8 ounces each)
  • 7 tablespoons butter
  • 1/2 cup flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 shallots, minced
  • 1/16 teaspoon chervil
  • 1/4 teaspoon tarragon
  • 2 green onions,minced
  • 1/2 teaspoon paprika
  • 1 cup wine (riesling)
  • 1 cup sour cream
  • 1/2 cup parsley, chopped (fresh)
  • 1 tablespoons chives, minced

How to Make

  • Step 1: Mix flour salt and pepper for dredge

  • Step 2: Dredge fish in flour

  • Step 3: Butter a 9x13 casserole dish

  • Step 4: Heat saute pan with 4 tablespoons butter

  • Step 5: Brown trout on each side

  • Step 6: Place in casserole

  • Step 7: Preheat oven to 350 degrees

  • Step 8: Add 2 more tablespoons of butter

  • Step 9: Saute the shallots, green onion until tender

  • Step 10: Add chervil,tarragon and paprika

  • Step 11: Add wine to deglaze

  • Step 12: Simmer 5 minutes

  • Step 13: Add sour cream

  • Step 14: Stir

  • Step 15: Pour over trout

  • Step 16: Bake 20 minutes at 350 degrees

  • Step 17: When cooked

  • Step 18: Sprinkle with parsley and chives
