Ingredients

The ingredients are:
  • 3 tablespoons olive oil
  • 2 1/2 pounds zucchini (trimmed, quartered lengthwise and cut cross-wise into 2 inch pieces)
  • 3/4 cup green olives (green pitted brined-cured, halved, divided)
  • 2/3 cup parsley
  • 1/2 cup almonds, chopped (toasted)

How to Make

  • Step 1: In a skillet over medium high heat heat the oil and then add the zucchini and saute for 5-10 minutes or until it begins to brown; season with salt and pepper. Add 1/2 cup olives and the parsley and then put all in a serving dish; sprinkle with almonds and the rest of the olives.
