  • 2 cups potatoes, chopped (peeled)
  • 8 cups vegetable broth (can use chicken)
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon oregano
  • 1 bay leaf
  • 1 1/2 cups Monterey Jack cheese, shredded
  • 1 cup milk

How to Make

  • Step 1: Heat oil saute onion in stockpot

  • Step 2: Add peppers, potatoes, broth, seasonings and corn. Simmer 25 minutes. Add milk.

  • Step 4: Dont boil

  • Step 5: Take out bay leaf
