  • 1/2 cup buttermilk
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon vanilla extract
  • 1 tablespoons maple syrup
  • 3/4 cup pecans, chopped
  • 1 cup raisins

How to Make

  • Step 1: Preheat oven to 400 degrees.

  • Step 2: Mix together oil, applesauce sugar, eggs, pumpkin, and buttermilk, maple syrup and extract.

  • Step 3: Sift flour, baking powder, baking soda, cinnamon, allspice. Add to wet ingredients; beat until batter is smooth. Stir in walnuts and raisins.

  • Step 4: Spoon into greased muffin tins full and bake 10 minutes,

  • Step 5: Reducing the oven to 350 degrees. Bake until toothpick comes out clean, about 15 additional minutes.
