Ingredients

The ingredients are:
  • 8 ounces malt vinegar
  • 8 ounces apple cider vinegar
  • 2 cups water
  • 1/3 cup lemon juice
  • 1/4 cup worcestershire sauce
  • 1 1/2 cups dark brown sugar
  • 2 teaspoons ground allspice
  • 1 teaspoons ground cayenne pepper
  • 1 teaspoons ground cinnamon
  • 1 teaspoons ground nutmeg
  • 1 teaspoons ground coriander
  • 1 teaspoons dry mustard powder
  • 2 teaspoons salt
  • 8 ounces pitted dates (chopped)
  • 3 cups cauliflower, finely chopped
  • 2 cups onions, finely diced
  • 2 cups apples, finely diced
  • 2 cups zucchinis, finely diced
  • 2 cups cornichon pickles
  • 5 garlic cloves, minced
  • 2 bay leaves
  • 2 teaspoons dried thyme

How to Make

  • Step 1: In a large saucepan over medium high heat,

  • Step 2: Mix together everything from the vinegar through salt,

  • Step 3: Bringing it to boil.

  • Step 4: Add in the remaining ingredients and reduce the heat to simmer.

  • Step 5: Continue to simmer 1 1/2 - 2 hours, stirring occasionally.

  • Step 6: Transfer into clean pint jars,

  • Step 7: Leaving about a half inch room at top, wipe the rims clean if needed, and seal with lids.

  • Step 8: You can process in a water bath for 30 minutes if desired,

  • Step 9: Or store in refrigerator for 4 - 6 months.

  • Step 10: You can enjoy right away, but just like any pickle, it is best the longer you allow the flavors to blend together a month.
