Step 1: In a frying pan, fry the “Wäinzoossissen” (bratwurst) sausages in butter on both sides over a high heat for 5 minutes. Then lower the temperature until they are properly cooked through.
Step 2: TO MAKE THE MUSTARD SAUCE: Finely chop the shallot and sweat it in the butter.
Step 3: Add a spoonful of mustard, stirring it in with a wooden spatula.
Step 4: Deglaze with the Riesling and the chicken stock to dilute the mustard. Reduce the sauce by 2/3.
Step 5: Then add the fresh cream and again reduce the sauce by half.
Step 6: Pour the mustard sauce over the “Wäinzoossissen”
Step 7: Top with the parsley and serve with mashed potatoes.
