  • 492 grams tomatoes, chopped (4 tomatoes)
  • 1 red bell pepper, diced
  • 2 cucumbers, chopped (peeled, seeded)
  • 1/2 red onion, chopped
  • 1/4 teaspoon oregano, dried
  • 1/2 cup olives, chopped (pimiento-stuffed green olives)
  • Salt
  • Pepper
  • 3/4 cup olive oil
  • 2 lemons, whole ( or limes, juice of)
  • 2 eggs, chopped (hard boiled)
  • 6 radish, quartered
  • 2 tablespoons parsley, minced
