Ingredients

The ingredients are:
  • 120 gram chorizo sausage (thinly sliced , 1 chorizo specified)
  • 1 onion, finely chopped
  • 2 stalks celery, sliced
  • 1 large carrot, finely chopped
  • 2 teaspoons Moroccan seasoning
  • 30 grams dry soup mix (1 sachet spring vegetable simmer soup mix specified)
  • 1 1/2 litres water (6 cups)
  • 400 grams cannellini beans (drained and rinsed)
  • 1/2 cup coriander leaves, fresh
  • Crusty bread, to serve

How to Make

  • Step 1: Heat a large oiled saucepan over a medium to high heat and add the chorizo, onion, celery and carrot and cook, stirring occasionally for about 3 minutes or until onion is soft and chorizo is golden in colour.

  • Step 2: Add seasoning and cook, stirring for 1 minute and then stir in soup mix, water and beans and bring to the boil and then simmer, uncovered, for 5 minutes and then stir in coriander leaves and serve with crusty bread.
