Ingredients

The ingredients are:
  • FOR CRUST
  • 1 cup graham cracker crumbs
  • 1/4 cup butter, soft
  • 2 tablespoons sugar
  • 1/2 teaspoon cinnamon
  • FOR FILLING
  • 24 ounces cream cheese
  • 3/4 cup sugar
  • 3 eggs
  • 8 ounces dark chocolate chips
  • 2 tablespoons heavy whipping cream
  • 1 cup sour cream
  • 1/4 cup brewed coffee (strong)
  • 1/4 cup brandy
  • 2 teaspoons vanilla extract
  • FOR TOPPING
  • 1 cup whipped cream
  • 1/4 cup cocoa powder

How to Make

  • Step 1: Combine crust ingredients, press into bottom of springform pan and refrigerate until set overnite wrap tin foil around pan

  • Step 2: Cream first 3 ingredients together

  • Step 3: Melt chocolate with the cream in microwave and cool completely,

  • Step 4: Mix chocolate mixture into cream cheese and cream together thoroughly using hand blender

  • Step 5: Mix final 4 ingredients together, fold into the cream cheese mixture until a very smooth consistency is attained

  • Step 6: Fill springform pan & gently tap the sides of the pan until all the big air bubbles rise to the surface

  • Step 7: Just keep gently patting the pan until only tiny bubbles rise to the top

  • Step 8: Put into a hot water bath

  • Step 9: Bake at 350 degrees 45 mins - or as long as it takes

  • Step 10: Watch closely - it is done when the outer edge puffs up slightly and the center is no longer entirely liquid when you gently shake the pan You may see a ripple go across the center when you shake the pan, but it should not be "liquid"

  • Step 11: If you overcook it will be dry

  • Step 12: Refrigerate overight

  • Step 13: Pipe whipped cream on top and dust with cocoa powder
