Step 1: Preheat the oven to 180C.
Step 2: Cream the butter and sugar and then add the egg yolks and beat well.
Step 3: Add the sifted flour, lemon rind and juice.
Step 4: Add the milk slowly to the creamed mixture, stirring well.
Step 5: Beat the egg whites until stiff, then fold into the mixture and put into a buttered shallow casserole dish and bake for about 45 minutes
