Ingredients

The ingredients are:
  • 3 pounds potatoes ( yellow flesh)
  • 6 ounces bacon (halved lengthwise then cut into 1/2 inch pieces, about 6 slices)
  • 2 tablespoons olive oil
  • 1/2 cup grated parmesan cheese
  • 2 garlic cloves, finely chopped
  • 1/4 cup chopped flat leaf parsley

How to Make

  • Step 1: Preheat oven to 425 with rack on lowest setting

  • Step 2: Cover potatoes with cold water and bring to a boil until just tender, about 12 minutes. Drain, cool to warm then cut in half crosswise

  • Step 3: Cook bacon in skillet until cooked through but still flexible drain on paper towels reserving fat.

  • Step 4: Brush bottom of 15 x 10 inch shallow baking dish with oil and half the reserved fat

  • Step 5: Sprinkle potatoes with salt and pepper and arrange in dish cut side down.

  • Step 6: Bake until undersides are golden about 30 minutes.

  • Step 7: Reduce oven temperature to 375. Turn potatoes over and sprinkle with bacon, cheese and garlic then drizzle remaining bacon fat over them. Bake until cheese is melted about 15 minutes
