Step 1: Preheat oven to 425 with rack on lowest setting
Step 2: Cover potatoes with cold water and bring to a boil until just tender, about 12 minutes. Drain, cool to warm then cut in half crosswise
Step 3: Cook bacon in skillet until cooked through but still flexible drain on paper towels reserving fat.
Step 4: Brush bottom of 15 x 10 inch shallow baking dish with oil and half the reserved fat
Step 5: Sprinkle potatoes with salt and pepper and arrange in dish cut side down.
Step 6: Bake until undersides are golden about 30 minutes.
Step 7: Reduce oven temperature to 375. Turn potatoes over and sprinkle with bacon, cheese and garlic then drizzle remaining bacon fat over them. Bake until cheese is melted about 15 minutes
