Ingredients

The ingredients are:
  • 2/3 cup self-raising flour (100 grams)
  • 1 cup caster sugar (220 grams)
  • 1/2 cup shredded coconut (40 grams)
  • 125 ml coconut cream (1/2 cup)
  • 2 eggs, lightly whisked
  • 1 teaspoon lime rind, finely grated
  • 1/3 cup lime juice (80 ml)
  • 3/4 cup water, boiling (185 ml)
  • Whipped cream, to serve
  • Shredded coconut, extra, toasted, to serve
  • Lime zest, to serve

How to Make

  • Step 1: Combine the flour, 2/3 cup (150 grams) of the sugar, shredded coconut, coconut cream, egg, lime rind and half the lime juice in a large bowl.

  • Step 2: Divide the mixture evenly among four microwave-safe 350 ml mugs and sprinkle with the remaining sugar.

  • Step 3: Combine the boiling water and remaining lime juice in a heatproof jug and pour the lime juice mixture over the back of a metal spoon onto the puddings in the mugs.

  • Step 4: Place the mugs on the outer edge of microwave plate and cook in microwave on medium for 8 mins or until a skewer inserted in the centres comes out clean.

  • Step 5: Top the puddings with the whipped cream and sprinkle with the lime zest and extra shredded coconut.
