Ingredients

The ingredients are:
  • FOR SALSA
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon honey
  • 2 beets (boiled, peeled with pith cut away and then cut into 1/3 inch cubes)
  • 1 cup red onion, chopped
  • 1/4 cup olives, chopped (green olives, pitted)
  • FOR BURGERS
  • 1 shallot, minced
  • 2 tablespoons cilantro, chopped
  • 1 jalapeno, minced and seeded
  • 1 garlic clove, minced
  • 1 1/4 teaspoon salt
  • 3/4 teaspoon pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cumin, ground
  • 1 3/4 pounds lamb, ground
  • 4 (184 grams) bread buns (hamburger buns, split horizontally)
  • 1 1/3 cups lettuce, sliced
  • Mayonnaise

How to Make

  • Step 1: To make the salsa: in a bowl whisk together first 3 ingredients (-honey) and then mix in next 4 ingredients (-olives) and season with salt and pepper. Cover and chill (***may be made 8 hours ahead).

  • Step 2: To make the burgers: In a bowl combine the first 8 ingredients (-cumin) and then mix in the lamb. Shape mixture to form four 1/2 inch patties. Arrange the patties on a cookie sheet (***can be made 8 hours ahead; covered and chilled).

  • Step 3: On a grill spray the racks with cooking spray and prepare grill to medium high heat. Grill buns, cut side down until golden (2 minutes) and transfer buns to work surface. Place lettuce and salsa on bottom of buns. Grill burgers until charred and cooked to desired doneness (3-5 minutes per side). Place one burger on each bun and top with mayonnaise and bun top. Serve with salsa.
