Ingredients

The ingredients are:
  • 1 can (16 1/2 ounces) cream style corn (yellow)
  • 1 can (4 ounce) green chiles (chopped)
  • 1/2 cup cornmeal (yellow)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 eggs, beaten
  • 1 cup milk
  • 1 cup cheese, grated
  • 1 teaspoon sugar
  • 1/2 cup onion, chopped

How to Make

  • Step 1: Preheat oven to 350 degrees F.

  • Step 2: In a bowl mix together all the ingredients except for the cheese and chiles. In a 2 quart casserole layer the cornmeal mixture with the chiles.

  • Step 3: Top with the cheese.

  • Step 4: Bake for one hour or until set.

  • Step 5: If desired add 1 cup sour cream and 1 (2 ounce) jar of chopped pimentos to the mixture before putting it in the casserole dish. Also good if instead of mixing the sour cream in with everything -- just pass sour cream and salsa with the casserole.
