Ingredients

The ingredients are:
  • 2 pounds chicken thighs (bone in)
  • 226 grams coconut milk (1 cup)
  • 1/4 cup Asian Sesame salad Dressing
  • 4 cloves garlic, minced
  • 2 tablespoons curry paste (yellow)
  • 1 teaspoon ground ginger
  • 1 1/2 teaspoons chili flakes
  • 480 grams snow peas (trimmed, blanched, 3 cups)

How to Make

  • Step 1: Pre=heat oven 375F

  • Step 2: Place thighs, skin side up in a shallow oven proof baking dish

  • Step 3: Whisk together all remaining ingredient except snow peas

  • Step 4: When nicely blended pour over chicken

  • Step 5: Turn the pieces a couple of times so they are evenly coated on both sides

  • Step 6: Bake uncovered for 45minutes,

  • Step 7: Add peas for the last 5 minutes
