Ingredients

The ingredients are:
  • 2 cups water
  • 7 ounces dry rice (dry 1 cup short-grain rice)
  • 4 whole cloves
  • 1/2 teaspoon vanilla
  • 1 cinnamon stick
  • 1 can (14 ounce) sweetened condensed milk
  • 1/2 cup evaporated milk
  • 4 ounces coconut milk (1/2 cup)
  • 1/2 cup raisins (golden)
  • 1 teaspoon grated lemon rind
  • Salt, pinch of
  • 1/2 teaspoon ground cinnamon

How to Make

  • Step 1: Place water and rice in a large saucepan. Place cloves, vanilla, and cinnamon

  • Step 2: Add to rice mixture.

  • Step 3: Bring to a simmer over medium heat, stirring frequently. Cover. Reduce heat to low;

  • Step 4: Cook 20 minutes and liquid is absorbed.

  • Step 5: Take out cloves and cinnamon stick

  • Step 6: Stir in milks and raisins; cook 10 minutes, stirring frequently.

  • Step 7: Stir in ginger, rind, and salt; cook 5 minutes,

  • Step 8: Stirring frequently. Add vanilla

  • Step 9: Pour rice mixture into a bowl or individual bowls. Sprinkle with cinnamon

  • Step 10: Cover surface of pudding with plastic wrap. Chill.
