Ingredients

The ingredients are:
  • 4 (1.4 kilogram) sweet potatoes (kumara, 4 x 350 grams specified)
  • 2 teaspoons olive oil (extra virgin)
  • 2 cloves garlic, minced
  • 500 grams ground turkey
  • 1/3 cup peanuts, salted (chopped, 45 grams)
  • 3 green onions (scallions), shredded
  • Micro coriander (baby cilantro, to serve)
  • FOR SATAY SAUCE
  • 95 grams smooth peanut butter (1/3 cup)
  • 1 tablespoon soy sauce
  • 1 tablespoon finely grated ginger root
  • 1/2 cup water (125ml)
  • 1 1/2 tablespoons honey

How to Make

  • Step 1: Preheat oven to 220°C (425°F).

  • Step 2: Wrap each sweet potato in aluminium foil and place on a large oven tray and cook, turning halfway, for 1 hour or until tender.

  • Step 3: While the potatoes are cooking, make the satay sauce - place the peanut butter, soy sauce, ginger, water and honey in a medium bowl and stir well to combine and then set aside.

  • Step 4: Heat the oil in a large frying pan over high heat and add the garlic and turkey and cook, stirring occasionally, for 8 minutes or until lightly browned and then add half the satay sauce and half the peanuts and stir to combine.

  • Step 5: Cut the potatoes in half lengthways and divide between 4 plates.

  • Step 6: Divide the turkey mixture between the potatoes and top with the remaining satay sauce, remaining peanut and the onion and coriander to serve.
