  • 4 ounces crumbled goat cheese
  • 1 pound bacon (sliced in half)
  • 1/2 cup walnuts, chopped
  • 11 ounces dried apricots

How to Make

  • Step 1: Preheat oven to 400 degrees.

  • Step 2: Put goat cheese in a medium bowl and set it aside.

  • Step 3: Partially cook the bacon in a large skillet in batches. Cook until brown but not crispy, then blot on paper towels.

  • Step 4: Save 2 tablespoons of the grease. Cook the walnuts in the 2 tablespoons of saved bacon grease. Cook on medium heat for 2 to 4 minutes. Stir frequently until toasted lightly.

  • Step 5: Add the walnuts and the drippings to the goat cheese, mixing well.

  • Step 6: Cut a slit in each of the apricots. Place 1 heaping teaspoon of the goat cheese mixture into each one.

  • Step 7: Wrap a piece of bacon around each apricot; keeping in place with a toothpick.

  • Step 8: Put each apricot into a 17x12inch sheet pan.

  • Step 9: Bake them for 10 minutes or until the bacon is crispy. Serve them while they are warm.
