Ingredients

The ingredients are:
  • 1/8 cup honey
  • 1/4 cup miso paste
  • 2 tablespoons olive oil (extra virgin)
  • 1/4 cup soy sauce
  • 1 tablespoon ginger root (finely grated)
  • 1 1/2 kilogram chicken thighs (4 Chicken Marylands specified which is thigh and drumstick kept intact bone in and skin on)
  • 800 grams sweet potato (peeled and cut into chunks)
  • 50 grams butter
  • 2 teaspoons ginger root (finely grated)
  • TO SERVE
  • Pan-fried Asian greens
  • Sesame seeds, toasted
  • Coriander, micro herb

How to Make

  • Step 1: Preheat oven to 200 C fan-forced.

  • Step 2: To make marinade mix honey, miso paste, olive oil, soy sauce and the first lot of ginely grated ginger.

  • Step 3: Score chicken and put in a lined roasting pan and pour over the marinade.

  • Step 4: Cook turning halfway for, for 40 minutes or until sticky and golden.

  • Step 5: Meanwhile, put sweet potato n a large saucepan and cover with cold water and bring to the boil over a high heat and cook until tender and then drain and return to the pan.

  • Step 6: Add butter and the second lot of finely grated ginger and mash until smooth and season to taste.

  • Step 7: Serve chicken and mash with pan-fried Asian greens, toasted sesame seeds and micro coriander.
