  • Meatballs
  • 1 1/2 pounds lean ground chicken (beef or pork, 680g)
  • 1/2 cup breadcrumbs (dry unseasoned)
  • 1/4 cup finely minced green onions (with white parts)
  • 2 tablespoons hoisin sauce
  • 1 egg
  • 2 teaspoons minced garlic
  • 1 teaspoon ginger root (fresh, grated)
  • 1 teaspoon sesame oil (dark)
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • Glaze
  • 1 cup sugar-free apricot jam (Smucker's has one)
  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon freshly squeezed lime juice
  • 1 tablespoon Sriracha hot sauce
  • 2 teaspoons minced garlic
  • 2 teaspoons ginger root (fresh, grated)
  • 1/2 teaspoon sesame oil (dark)
  • Garnish
  • Green onions, finely chopped
  • Sesame seeds, toasted (optional)

How to Make

  • Step 1: Preheat oven to 400F.

  • Step 2: In a large bowl combine all the ingredients for the meatballs, using your hands works best.

  • Step 3: Wetting your hands makes forming the mixture into bite-size meatballs easier as it will not stick; form meatballs about 1 1/2 inches in diameter.

  • Step 4: Place meatballs on a non-stick baking sheet.

  • Step 5: Bake in preheated oven for 15-18 minutes or until cooked through; stirring meatballs once, halfway through cooking time, to brown sides.

  • Step 6: While meatballs are cooking, prepare glaze.

  • Step 7: In a 10 inch deep non-stick skillet, whisk together all glaze ingredients.

  • Step 8: Cook over medium-high heat until mixture is hot and bubbly and jam has melted.

  • Step 9: Add cooked meatballs and mix gently, ensuring every meatball is coated with sauce.

  • Step 10: Garnish with green onions and sesame seeds if using.

  • Step 11: Serve hot.
