Ingredients

The ingredients are:
  • 4 cups cabbage, chopped (packed chopped Napa cabbage)
  • 1 1/2 cups cabbage, grated (or finely sliced red cabbage)
  • 1 1/2 cups carrots, grated
  • 1 cup red peppers, finely diced
  • 1 cup snap peas, julienned (sugar snap peas or snow peas)
  • 1/2 cup chopped green onions
  • 1/2 cup peanuts, chopped
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons sesame seeds (optional)
  • FOR DRESSING
  • 1/4 cup hoisin sauce
  • 2 tablespoons oil (sunflower or peanut oil)
  • 2 tablespoons sesame oil (dark)
  • 2 tablespoons freshly squeezed lime juice
  • 2 tablespoons rice vinegar (unseasoned)
  • 1 tablespoon ginger root (grated fresh)
  • 1 teaspoon minced garlic
  • Crushed red pepper flakes, pinch of ( OR a few drops of hot sauce)
  • Salt & pepper, to taste

How to Make

  • Step 1: In a large bowl, combine all salad ingredients and mix well; set aside.

  • Step 2: Whisk together all dressing ingredients in a small bowl or measuring cup.

  • Step 4: If not serving it immediately, cover and refrigerate until serving; give the salad a good toss before serving.
