  • 1 tablespoon olive oil
  • 2 cups vegetable stock
  • 158 grams dry rice (raw 1 cup)
  • 3 tablespoons lemon juice
  • 1/4 teaspoon turmeric
  • 1/2 teaspoon white pepper
  • 1 teaspoon salt
  • 1/2 teaspoon lemon zest
  • 4 green onions (white and green part minced, separately)
  • 1 clove garlic, smashed, can add more
  • 1 tablespoon dill, minced (fresh)
  • 1 tablespoons cashew nuts (chopped)

  • Step 1: Heat oil and butter saute white part of onion add garlic

  • Step 2: Add spices

  • Step 3: Add rice

  • Step 4: Add broth and juice

  • Step 5: Cover simmer on low 20 minutes

  • Step 6: Add dill zest and greens tops minced

  • Step 7: Top with cashews
