Ingredients

The ingredients are:
  • 1/2 cup granulated sugar
  • 2 egg yolks
  • 1/2 cup butter, melted and cooled
  • 1/2 teaspoon lemon peel, finely shredded
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla
  • 1/2 cup all purpose flour
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1/4 cup almonds, toasted and finely chopped
  • 2 egg whites, slightly beaten
  • Powdered sugar

How to Make

  • Step 1: Preheat oven to 375℉ (190℃)

  • Step 2: Grease and flour 24 3-inch Madeleine molds, set aside

  • Step 3: Beat granulated sugar and egg yolk for 30 seconds

  • Step 4: Add butter, lemon peel, lemon juice, and vanilla. Beat on low speed until combined

  • Step 5: Combine flour, baking powder, baking soda, and salt

  • Step 6: Sift about 1/4 of the flour mixture into egg yolk mixture and gently stir to combine. Repeat with remaining flour, sifting and stirring in 1/4 flour mixture at a time.

  • Step 7: Add nuts

  • Step 8: Gently stir in egg whites

  • Step 9: Spoon batter into prepared molds, filling each about half full

  • Step 10: Bake in preheated oven 10-12 minutes, or until edges are golden and tops spring back when lightly touched

  • Step 11: Cool in molds 1 minute then loosen from molds with the tip of a knife and invert onto cooling racks to cool completely

  • Step 12: Before serving, sift powdered sugar over tops of cookies
