Step 1: Preheat oven to 375℉ (190℃)
Step 2: Grease and flour 24 3-inch Madeleine molds, set aside
Step 3: Beat granulated sugar and egg yolk for 30 seconds
Step 4: Add butter, lemon peel, lemon juice, and vanilla. Beat on low speed until combined
Step 5: Combine flour, baking powder, baking soda, and salt
Step 6: Sift about 1/4 of the flour mixture into egg yolk mixture and gently stir to combine. Repeat with remaining flour, sifting and stirring in 1/4 flour mixture at a time.
Step 7: Add nuts
Step 8: Gently stir in egg whites
Step 9: Spoon batter into prepared molds, filling each about half full
Step 10: Bake in preheated oven 10-12 minutes, or until edges are golden and tops spring back when lightly touched
Step 11: Cool in molds 1 minute then loosen from molds with the tip of a knife and invert onto cooling racks to cool completely
Step 12: Before serving, sift powdered sugar over tops of cookies
