Step 1: In a bowl, combine powdered sugar, flour and cornmeal; set aside
Step 2: In a large bowl beat eggs on high speed for about 4 minutes, or until thick and lemon-colored
Step 3: Beat in flour mixture on low speed, just until combined
Step 4: Beat in butter and honey till combined
Step 5: Stir in orange peel
Step 6: Cover and chill 1 hr
Step 7: Preheat oven to 375F
Step 8: Coat miniature madeline molds with cooking spray, or grease and flour molds
Step 9: Stir batter and spoon 1 teaspoon into each mold
Step 10: Bake for 7 - 8 minutes or until golden and immediately invert pan and gently tap on counter to unmold
Step 11: Transfer cookies to a wire rack to let cool.
Step 12: Cool, wash and dry molds, then grease and flour again to bake remaining cookies
Step 13: To make frosting; beat butter till fluffy. Gradually add in 1 cup powdered sugar, beating well. Slowly beat in the orange juice and the remaining sugar. If needed add more orange juice to get a consistency for piping.
Step 14: Pipe flat side of half of the madeleines with orange frosting and top with remaining cookies
Step 15: Sprinkle sandwich cookies with powdered sugar
