Ingredients

The ingredients are:
  • 10 ounces cherry tomatoes (1 1/2 cups,chopped)
  • 1/3 cup kalamata olives (pitted and chopped)
  • 3 tablespoons olive oil (divided)
  • 2 tablespoons peppermint (chopped)
  • 1 tablespoon red wine vinegar
  • 3 1/2 ounces feta cheese, crumbled
  • 4 (24 ounces) boneless skinless chicken breast (about 6 ounce each)

How to Make

  • Step 1: In a bowl combine the tomatoes, olives, 2 tablespoons of the olive oil, mint and vinegar and then stir in the feta cheese. Season to taste with salt and pepper.

  • Step 2: Prepare grill (medium high heat). Brush chicken with 1 tablespoon oil and sprinkle with salt and pepper. Grill chicken until cooked through (7-10 minutes per side). Transfer to plates and slice and top with relish.
