Step 1: In a bowl combine the tomatoes, olives, 2 tablespoons of the olive oil, mint and vinegar and then stir in the feta cheese. Season to taste with salt and pepper.
Step 2: Prepare grill (medium high heat). Brush chicken with 1 tablespoon oil and sprinkle with salt and pepper. Grill chicken until cooked through (7-10 minutes per side). Transfer to plates and slice and top with relish.
