Ingredients

The ingredients are:
  • 2 portabella mushrooms, whole, stems and gills removed, chop up the stems
  • 1 jalapeno pepper, finely chopped
  • 1 large garlic clove, minced
  • 2 tablespoons yellow sweet pepper, chopped
  • 2 tablespoons sweet red peppers, chopped
  • 2 tablespoons sweet onions, chopped
  • 2 tablespoons butter
  • 4 tablespoons cheddar, grated

How to Make

  • Step 1: Heat the butter in a skillet, brown the mushroom caps on both sides, remove and drain on a paper towel

  • Step 2: Add the onions, garlic and chopped stems to the skillet cook for approximately 5 minutes, add peppers cook 1 minute

  • Step 3: Place mushroom caps in an oven proof dish, fill them with the pepper mixture, sprinkle cheese on top

  • Step 4: Bake in 375f oven for 8 minutes, turn on broiler, broil for 2 minutes or until the cheese is nice and bubbly Enjoy
