Step 1: In a large soup pot, combine the chicken broth, coconut milk, soy sauce, fish sauce, honey, peanut butter, and curry paste.
Step 2: Add the chicken, cremini mushrooms, red peppers, ginger, and garlic.
Step 3: Set over medium heat on the stove and bring to a simmer
Step 4: Simmer 15 minutes or until the chicken is cooked through and can be easily shredded.
Step 5: Shred chicken
Step 6: Bring the soup to a boil over high heat.
Step 7: Stir in the noodles, lime juice, spinach, and cilantro.
Step 8: Let sit 5 minutes or until the noodles are soft.
Step 9: Ladle the soup into bowls and top with chopped peanuts and/or toasted sesame oil.
