Ingredients

The ingredients are:
  • 1 package (2 ounce) sorrel (dried, 60 grams)
  • 1/3 cup ginger root (fresh, grated)
  • Orange peel (2 strips)
  • 8 cups water, boiling
  • 2/3 cups brown sugar (dark, firmly-packed)
  • 3 cups wine (port)
  • 1/2 cup rum (white)
  • 2 tablespoons lime juice (fresh)
  • Nutmeg, pinch

How to Make

  • Step 1: In non-metallic heatproof pitcher or crock, combine sorrel, ginger, orange peel and boiling water.

  • Step 2: Stir, cool and cover lightly.

  • Step 3: Let stand for 1 day at room temperature.

  • Step 4: Strain into large bowl; blend in remaining ingredients, adding a pinch of grated nutmeg and stir to dissolve sugar.

  • Step 5: Transfer to large bottles or canning jars and store in refrigerator.

  • Step 6: To serve, pour over lots of ice in tall glasses.
