  • 12 ounces (3 medium) tomatoes, peeled, seeded an diced
  • 1 green pepper, minced
  • 2 tablespoons fresh parsley, chopped
  • 1/3 cups small green peas (petit pois)
  • 6 eggs, well beaten

How to Make

  • Step 1: Melt 2 tablespoons butter in a large skillet. Add onion, tomatoes, green pepper, and parsley. Saute for a few minutes until onions and peppers are tender. Season with salt and pepper to taste.

  • Step 2: Add peas, eggs, and remaining 1 tablespoon butter. Stir over medium heat until eggs are well scrambled to your taste.
