Step 1: Preheat oven to 350 degrees.
Step 2: In skillet, heat the olive oil
Step 3: Saute onion, pepper, garlic until the onion is soft and translucent , about 5 minutes.
Step 4: Add the tomato sauce, pimientos, and wine.
Step 5: Cook for about 15 minutes over low heat, stirring occasionally, until thickened.
Step 6: Lightly oil and pam spray 4 small oven-proof ramekins
Step 7: Spoon the sofrito into each one, filling it half-way
Step 8: Add 2 eggs on top
Step 9: Drizzle the melted butter over the eggs.
Step 10: Bake for about 25 minutes or until the whites are set and the yolks are still slightly soft.
Step 11: Sprinkle with salt, pepper and parsley.
