Step 1: To make the dressing, whisk all ingredients in a jug until well combined.
Step 2: Quarter unpeeled peras and remove cores and cut into thick wedges.
Step 3: Cut the cauliflower into 1cm thick slices and then coarsely chop.
Step 4: Place pears, cauliflower and onion in a large roasting pan and pour over half the dressing and sprinkle with fennel and cumin and toss well and then cook in a hot oven (200C) for about 35 minutes or until golden and the pears and cauliflower are tender and then transfer mixture to a serving dish and toss through the spinach and drizzle with remaining dressing.
