Ingredients

The ingredients are:
  • 650 grams pears (3 firm William pears specified)
  • 900 grams cauliflower
  • 1 red onion, halved and thickly sliced
  • 2 teaspoon fennel seeds
  • 1 teaspoon ground cumin
  • 75 grams spinach, baby leaves
  • FOR DRESSING
  • 1/3 cup olive oil
  • 1/4 cup lemon juice
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1 garlic clove, minced
  • Salt, to taste
  • Pepper, to taste

How to Make

  • Step 1: To make the dressing, whisk all ingredients in a jug until well combined.

  • Step 2: Quarter unpeeled peras and remove cores and cut into thick wedges.

  • Step 3: Cut the cauliflower into 1cm thick slices and then coarsely chop.

  • Step 4: Place pears, cauliflower and onion in a large roasting pan and pour over half the dressing and sprinkle with fennel and cumin and toss well and then cook in a hot oven (200C) for about 35 minutes or until golden and the pears and cauliflower are tender and then transfer mixture to a serving dish and toss through the spinach and drizzle with remaining dressing.
