  • 1 ounce prosciutto ham
  • 1/4 cup finely chopped onion
  • 1 teaspoon olive oil
  • 2 cups peas (frozen, thawed)
  • 1/4 cup water
  • 1/2 teaspoon chicken bouillon granules (or equivalent)
  • 1/2 teaspoon dried oregano (or 1 teaspoon fresh, minced)
  • 2 tablespoons pine nuts (toasted, or chopped walnuts)
  • 1/4 teaspoon salt, or to taste
  • 1/4 teaspoon pepper, or to taste

How to Make

  • Step 1: Cut prosciutto into thin strips.

  • Step 2: Heat oil in skillet, add prosciutto strips and onion. Cook until onion is softened and prosciutto is somewhat crisp.

  • Step 3: Add peas, water, bouillon, oregano and pepper.

  • Step 4: Cover and simmer just until peas are tender - about 4 minutes.

  • Step 5: Salt to taste.

  • Step 6: Stir in toasted nuts before serving.
