Ingredients

The ingredients are:
  • FOR APPLE CIDER VINAIGRETTE
  • 1/3 cup olive oil
  • 3 tablespoons apple cider vinegar
  • 2 tablespoons lemon juice (freshly squeezed)
  • 2 tablespoons Dijon mustard
  • 2 tablespoons maple syrup (pure)
  • 1/4 teaspoon sea salt (each, and freshly ground black pepper or to taste)
  • FOR SALAD
  • 4 cups kale (chopped, packed, ribs removed)
  • 2 cups cabbage (finely sliced or grated)
  • 2 cups carrots, grated
  • 1 cup dried cranberries
  • 3/4 cup pepitas (pumpkin seeds)
  • 1/2 cup green onions (chopped, with white parts)
  • 1/3 cup parsley, chopped (fresh)

How to Make

  • Step 1: Whisk together all the dressing ingredients in a small bowl or measuring cup; set aside until ready to use.

  • Step 2: Place chopped kale in a large bowl and add 1/4 cup vinaigrette and massage kale for 5 minutes using your hands. (I know this is weird and cumbersome but just do it, please! You will be happy you did.)

  • Step 3: Add all remaining salad ingredients and at least 6 tablespoons dressing (or more, if desired; you might not use all of it).

  • Step 4: Mix well, cover and refrigerate for at least 1 hour before serving.
