Ingredients

The ingredients are:
  • 1 1/2 litres water(6 cups)
  • 185 grams pho soup paste
  • 400 grams boneless skinless chicken breasts ( trimmed, thinly sliced)
  • 200 grams rice noodles (pad Thai rice)
  • 1 1/3 cups carrot, shredded
  • 124 grams bean sprouts (1 cup, fresh trimmed)
  • 1 cup coriander leaves (fresh)
  • 1/3 cup peppermint (fresh, sliced fresh)
  • Lime wedges, to serve

How to Make

  • Step 1: Bring water to a boil in a large saucepan and stir in pho paste until combined and then add chicken and simmer for about 4 minutes, or until chicken is just cooked and then remove from heat.

  • Step 2: Meanwhile, prepare noodles according packet directions.

  • Step 3: Divide noodles among serving bowls and add 1/3 cup shredded carrot to each bowl and top with sprouts and spoon over chicken mixture and top with combined coriander and mint.

  • Step 4: Serve with lime wedges.
