Step 1: In a blender, or food processor, combine egg, salt, mustard, lemon juice and 1/4 cup oil
Step 2: Process until thoroughly blended and scrape down the sides
Step 3: With machine running, add remaining oil very slowly and steadily
Step 4: Continue to process until all the oil is added and the mayonnaise is light and thick.
Step 5: Store covered in refrigerator
