  • 1 egg
  • 1/2 teaspoon salt
  • 1/2 teaspoon dry mustard
  • 2 tablespoons lemon juice
  • 1 cup oil (salad oil)

How to Make

  • Step 1: In a blender, or food processor, combine egg, salt, mustard, lemon juice and 1/4 cup oil

  • Step 2: Process until thoroughly blended and scrape down the sides

  • Step 3: With machine running, add remaining oil very slowly and steadily

  • Step 4: Continue to process until all the oil is added and the mayonnaise is light and thick.

  • Step 5: Store covered in refrigerator
