Step 2: Reduce heat to low, stirring once or twice; simmer for 5 minutes.
Step 3: Add glutinous rice and stir until it is evenly moistened.
Step 4: Remove pan from heat and cover.
Step 5: Caramelized Pineapple: Cut crown from pineapple, then cut off shell.
Step 6: Cut pineapple lengthwise into quarters.
Step 7: Rim off core and cut each quarter into 3 wedges.
Step 8: Place in a large bowl, sprinkle with brown sugar, and toss to evenly coat.
Step 9: Spread pineapple on a foil-lined rimmed baking sheet.
Step 10: Preheat broiler.
Step 11: Broil pineapple 3 to 4 inches from heat, turning once, until sugar melts but does not burn, about 2 minutes.
Step 12: To serve, scoop rice into bowls and serve with pineapple wedges.
Step 13: Garnish with toasted coconut and mint.
