  • 4 large tomatoes
  • 1/2 cup parsley, chopped
  • Basil
  • 1 lb spaghetti noodles
  • 1/2 cup olive oil
  • 4 garlic cloves, peeled
  • 16 grams anchovy fillets
  • 1 teaspoon salt
  • 1/4 teaspoon fresh ground pepper

How to Make

  • Step 1: In a blender or food processor, combine tomatoes and herbs and purée until smooth.

  • Step 2: Meanwhile cook pasta in boiling water until “al dente”

  • Step 3: In a large flameproof casserole; combine oil, garlic, and anchovies and mash together. Season with salt and pepper.

  • Step 4: Add tomatoes and heat gently.

  • Step 5: Drain pasta and toss with sauce.

  • Step 6: Garnish as desired.

  • Step 7: Serve immediately.
