Step 1: Wash the unpeeled potatoes and thinly slice them.
Step 2: Peel and chop the onion and scallions and saute them in the heated oil till light brown.
Step 3: Put a layer of potato slices in a non-greased oven dish.
Step 4: Sprinkle half of the ham, cheese and onions on it; add another layer of potato slices and the remainder of the ham and cheese. Add more layers if you wish.
Step 5: Pour the cream in a saucepan and add the paprika and mustard; season with salt and pepper. Heat the cream below boiling and pour it over the potato-ham-cheese dish.
Step 6: Put in a preheated over at 215C / 425F and bake for 45 minutes.
