  • 29 ounces white asparagus (2 cans - reserve 1/2 cup liquid)
  • 2 tablespoons butter
  • 2 tablespoons unbleached flour
  • 1/2 cup asparagus liquid (reserved from the cans)
  • 1/2 cup milk
  • 4 ounces ham, cut into julienne strips
  • 1/8 teaspoon nutmeg, freshly grated
  • 1/4 teaspoon salt

How to Make

  • Step 1: Drain asparagus spears, reserving 1/2 cup of the liquid.

  • Step 2: Heat butter in a saucepan. Add flour; blend.

  • Step 3: Gradually pour in asparagus liquid and milk.

  • Step 4: Stir constantly over low heat until sauce thickens and bubbles.

  • Step 5: Add cooked ham and seasonings.

  • Step 6: Gently stir in asparagus spears; heat through but do NOT boil.

  • Step 7: Serve in preheated serving dish.
