Ingredients

The ingredients are:
  • 1 envelope (3 ounce) unflavored gelatin
  • 3 eggs, separated
  • 4 tablespoons sugar
  • 2 lemons, whole
  • 1 orange, whole
  • 1 cup plain yogurt
  • 2 tablespoons crystallized ginger (finely chopped)
  • Salt, 1 pinch

How to Make

  • Step 1: Zest and juice lemons and orange

  • Step 2: Soften gelatin in 2 tbsp cold water.

  • Step 3: Beat egg yolks, gradually adding 2 tbsp sugar until lemon colored.

  • Step 4: In top of a double boiler, heat eggs yolks, softened gelatin, fruit rind, and juice, stirring frequently until mixture has thickened slightly and gelatin has dissolved.

  • Step 5: Cool and fold in yogurt and ginger.

  • Step 6: Beat egg whites and salt until stiff moist peaks form.

  • Step 7: Gradually add remaining 2 tbsp sugar; beat until stiff and shiny.

  • Step 8: Fold into yolk mixture.

  • Step 9: Spoon into a 6 cup mold.

  • Step 10: Chill 6 hours or until firm.
