Ingredients

The ingredients are:
  • FOR MEATBALLS
  • 8 ounces ground beef
  • 1/4 cup dry bread crumbs
  • 1/4 cup parmesan cheese, grated
  • 1/8 teaspoon nutmeg
  • 2 cloves garlic,smashed
  • 1 egg
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon paprika
  • FOR SOUP
  • 1 tablespoons oil
  • 1/2 cup onions,chopped
  • 1 cup carrots, sliced
  • 2 cloves garlic,smashed
  • 1 tablespoons paprika
  • 1/2 teaspoon thyme
  • 1 tablespoons butter
  • 8 cups chicken stock
  • 1/2 cup parsley,minced
  • 1 tablespoons lemon juice
  • 1/2 cup couscous ( israeli)

How to Make

  • Step 1: Meatballs:

  • Step 2: Combine and chill 30 minutes

  • Step 3: Soup:

  • Step 4: Heat oil

  • Step 5: Add onions

  • Step 6: Add garlic

  • Step 7: Add spices

  • Step 8: Cook until onions opaque

  • Step 9: Add carrots

  • Step 10: Add stock and thyme

  • Step 11: Simmer 15 minutes

  • Step 12: Roll chilled meat into marble sized meatballs

  • Step 13: Drop into simmering stock

  • Step 14: Cook 5 minutes add Couscous

  • Step 15: Cover and simmer 10 minutes more

  • Step 16: Add lemon juice and parsley after you have turned covered soup pan off and let it rest for 5 minutes more
