Step 1: Cut each chicken breast in half and pound to about 1/4 inch thickness.
Step 2: Place wedges of cheese on each half and roll, tucking in the edges and securing with a toothpick. Coat the roll with flour, then dip into beaten egg.
Step 3: Roll in bread crumbs and allow to dry for 10-15 minutes.
Step 4: Heat oil to 325 degrees and fry rolls for about 10 minutes or until golden.
