  • 4 (16 ounces) boneless skinless chicken breasts (about 4 ounces each)
  • 1/4 pound Edam cheese (or Gouda, cut into 8 wedges)
  • Flour
  • 2 eggs, beaten
  • Fine dry breadcrumbs
  • Oil, for deep-frying

How to Make

  • Step 1: Cut each chicken breast in half and pound to about 1/4 inch thickness.

  • Step 2: Place wedges of cheese on each half and roll, tucking in the edges and securing with a toothpick. Coat the roll with flour, then dip into beaten egg.

  • Step 3: Roll in bread crumbs and allow to dry for 10-15 minutes.

  • Step 4: Heat oil to 325 degrees and fry rolls for about 10 minutes or until golden.
