Step 1: Rinse and drain cherries.
Step 2: Discard stems and pit the cherries.
Step 3: In a medium saucepan, add water and brown sugar; bring to a simmer.
Step 4: Add red wine and lemon zest.
Step 5: Bring back to a simmer and cook for 3 minutes over medium heat, stirring occasionally.
Step 6: Add the pitted cherries; let mixture return to a simmer for 2 minutes.
Step 7: Remove from heat, cover with a lid, and let cool to room temperature.
Step 8: After mixture has cooled, refrigerate over night.
Step 9: Spoon cherries and liquid into individual serving bowls.
Step 10: Serve with your favorite wafers, cookies or ice cream.
