Ingredients

  • 1 pound cabbage, cored (400-500 grams)
  • 2 ounces carrots, julienned (60 grams)
  • 1 green onion, thinly sliced
  • 6 perilla leaves, thinly sliced, optional
  • Fine sea salt
  • 2 tablespoons gochugaru (Korean chili flakes)
  • 2 tablespoons rice vinegar
  • 1 tablespoon fish sauce ( Korean fish sauce or 2 Tbsp regular soy sauce, or 2 tablespoons soy sauce)
  • 1 tablespoon castor sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon sesame oil
  • 1 tablespoon roasted sesame seeds
  • 1 teaspoon minced garlic

How to Make

  • Step 1: Thinly slice the cabbage. Place it into a large mixing bowl. Sprinkle some salt and gently mix the cabbage to wilt it lightly.

  • Step 2: Add the carrots and the sauce. Mix them well. Garnish with green onion and perilla leaves.

  • Step 3: Serve.

  • Step 4: Best to consume within 24 hours of making it.
