  • 2 tablespoons minced green onions (or 2 tablespoons chives)
  • 1 1/3 cups buttermilk
  • 1 can (10 ounce) chicken broth
  • 4 small fresh parsley sprigs
  • Garnish: Thin slices of unpeeled cucumber, minced fresh parsley, or cooked shrimp (optional)

How to Make

  • Step 1: In a colander, place chopped cucumber and sprinkle with salt: let drain for 30 minutes and then pat dry.

  • Step 3: To serve, garnish with cucumber slices and minced parsley and add a few shrimp if desired.
