Ingredients

The ingredients are:
  • 4 potatoes, boiled, mashed
  • 2 eggs, lightly beaten
  • 2 slices white toast, finely crumbed
  • 1 teaspoon potato flour
  • 1 teaspoon fresh parsley, chopped
  • 1 pinch nutmeg
  • Salt and pepper to taste
  • 4 tablespoons butter (optional)

How to Make

  • Step 1: Combine all the ingredients, except butter mix well

  • Step 2: Shape the mixture into walnut sized balls

  • Step 3: In a large saucepan heat water to boiling

  • Step 4: Drop the dumplings in one at a time into rapidly boiling water

  • Step 5: When they rise to the top, lift them out, drain well

  • Step 6: These may be served without frying them in butter but I like to brown them nicely and the butter adds to their flavour. Also, this step ensures that they are lovely and hot right through when you serve them
