Ingredients

The ingredients are:
  • 1/4 cup cacao or cocoa powder (25 grams)
  • ½ cup honey (175 grams)
  • 1 teaspoon vanilla bean paste
  • 80 ml melted coconut oil (1/3 cup)
  • 2 tablespoons tahini
  • 1 cup puffed brown rice (15 grams)
  • 3/4 cup buckwheat (150 grams)
  • 1 cup flaked almonds, toasted (80 grams)
  • 1/2 cup shredded coconut (40 grams)
  • 2 tablespoons white chia seeds

How to Make

  • Step 1: Place the cacao, honey, vanilla, coconut oil and tahini in a medium saucepan over low heat. and cook, stirring, for 3 minutes or until melted and then add the puffed rice, buckwheat, almond, coconut and chia seeds and stir until well to combine.

  • Step 2: Place 1/4 cupful of the mixture on 1 of 2 large baking trays lined with non-stick baking paper, pressing slightly to flatten into rounds. Place in the freezer for 30 minutes to set and then serve.
