Ingredients

The ingredients are:
  • 2 kilograms beef short ribs (8 beef ribs specified
  • 3 bay leaves
  • 1 bulb garlic halved
  • 1 cup Worcestershire sauce (250 ml)
  • 1 1/2 litres water, cold
  • 1 cup brown sugar (175 grams)
  • 1 cup water, extra (250ml)
  • 2 tablespoons parsley, finely chopped

How to Make

  • Step 1: Place the ribs, bay leaves, garlic and 1/4 cup (60 ml) of the Worcestershire sauce in a large saucepan and cover with the cold water and bring to the boil and then reduce heat to low, cover and cook for 1 hour or until tender.

  • Step 2: Remove the ribs and place in a large roasting dish, discarding the cooking liquid.

  • Step 3: Preheat oven to 220C (425F).

  • Step 4: Place the sugar, extra water and remaining Worcestershire sauce in a medium bowl and mix to combine and then pour over the ribs and cover with aluminium foil and cook for 35 to 40 minutes and then remove the foil and cook for a further 20 minutes or until dark golden brown and sticky.

  • Step 5: Sprinkle with the parsley and serve.
