Step 1: Cut cauliflower into florets and place in a large bowl with seasoning and drizzle well with olive oil and toss well to coat and then place on a large oven tray.
Step 2: Cook in a hot oven (200C) for about 20 to 25 minutes, or until golden brown and tender.
Step 3: Transfer to a serving bowl and sprinkle with currants and mint.
