  • 1.3 kilogram cauliflower (trimmed)
  • 2 teaspoons harissa spice
  • 1/4 cup currants
  • 1/4 cup chopped pepper mint (fresh)
  • Olive oil, for cooking

How to Make

  • Step 1: Cut cauliflower into florets and place in a large bowl with seasoning and drizzle well with olive oil and toss well to coat and then place on a large oven tray.

  • Step 2: Cook in a hot oven (200C) for about 20 to 25 minutes, or until golden brown and tender.

  • Step 3: Transfer to a serving bowl and sprinkle with currants and mint.
