Ingredients

The ingredients are:
  • 4 medium (3 pounds) potatoes
  • 1 jar (15 1/2 ounces) spaghetti sauce (with meat)
  • 1 can (15 ounce) corn, drained
  • 1 package (4 ounces) pepperoni (sliced)
  • 1/2 cup mozzarella cheese, shredded (or cheddar)

How to Make

  • Step 1: Wash potatoes; pat dry with paper towels. Prick several times with a fork; arrange on a microwave-safe plate. Cook, uncovered, on high for 14 to 17 minutes, or until potatoes are almost tender, rearranging once during cooking. Let stand for 5 minutes.

  • Step 2: Meanwhile, for sauce: in a 2-quart microwave-safe casserole stir together spaghetti sauce, corn and pepperoni. Cook, uncovered, on high for 3 to 5 minutes or until heated through, stirring occasionally.

  • Step 3: To serve, cut a deep slit in the top of each potato.

  • Step 4: Top with sauce and cheese.
